Cedar City Backyard Barbecue Cook-off October 29, 2010 General Information (information is subject to change)
Barbecue Cook-off There is no entry fee to cook Meat will be provided Two meat categories; Chicken and Pork Ribs Chicken may be turned in as either whole pieces or sliced, pulled, shredded or chopped Ribs must be turned in on the bone Garnish will not be allowed Prizes for top 3 finishers in each meat category Prizes for overall Grand Champion and Reserve Grand Champion Number of entries may be limited, this will be determined as entries are received Any fuel may be used, charcoal, wood, propane, etc. If propane or gas is used, cooker must be commercially manufactured, (i.e., no homemade units) Set-up and check in will begin at 8:00 a.m. on Friday, October 29, 2010 There is no set minimum arrival time as of yet, basically if you think you can get set up and be done cooking in time for turn-ins, that is up to the teams to decide* Cooks meeting time has yet to be determined, (*see note above) Exact turn in times are yet to be determined but will occur at approx. 4:30 - 5:00 p.m. Awards will be presented at approximately 7:00 p.m. The Arena has water and limited power available It is recommended that at least one member of each team have a valid food handlers permit It is suggested to bring 2 sets of utensils, one for raw and one for finished meats. That way you can clean up at home and not cross contaminate your food
This event will also include a people's choice category People's choice will be for pork spareribs only Tasting and voting will take place between 5:00 and 7:00 p.m. Prizes will be awarded to the top finisher Participation in the people's choice is optional "Tasting packets" will be sold for $5.00 per person. Packet will include; instructions, tickets to be used as voting ballots, tasting utensils, a plate, and a hand towel The amount of meat provided to the cooks should be adequate to allow for enough to submit for judging as well as provide enough for the people's choice Portions will need to be cut to approximately the size of a quarter. There may be up to 100 tasting packets sold so cooks prepare accordingly
The Cross Hollow Event Center includes indoor and outdoor equestrian facilities, spectator stands, concessions, parking and is located just west of Cedar City, Utah Located two miles west of Cedar City in Cross Hollows subdivision. From I-15, take Cedar City center exit #59, onto 200 North (Utah State Highway 56), head west on Hwy. U-56 for about two miles to the Cross Hollows Road (just past Gen Pak Manufacturing), then head south to the facility.
The Live stock and Heritage Festival will also include a Dutch Oven competition on Saturday, October 30, 2010 Cooking and set up starts at 7 a.m. Judging will be done by people's choice. Tasting packets cost $5.00, which includes 5 tickets to use as voting ballots to choose this year’s winners.
